Commercial evaluation
Once technical performance is acceptable, compare tomato candidates on the basis of finished-product economics rather than purchase price alone. Concentration influences how much paste is required, how much water enters the formula and the finished yield obtained from each shipment.
Also consider delivered cost, pack efficiency, minimum order quantities, storage requirements, supply reliability and whether a particular paste changes the required level of starch, gum, sweetener or other formulation components.
