Commercial evaluation
Once technical performance is acceptable, compare candidates on a delivered-cost basis. Consider concentration, usable yield, freight, pack efficiency, minimum order quantities, inventory requirements and any formulation changes needed to achieve the same finished-product standard.
A paste with a higher unit price may still be competitive if it provides more usable tomato solids, stronger color, improved yield or a reduction in another formulation component. The comparison should therefore be based on the finished sauce economics rather than ingredient price alone.
